Marzipan in Toledo: more than tradition

The marzipan is made by crushing a mixture of equal parts of raw almonds and sugar with rollers, until the almond oil binds the mixture in the form of a soft and smooth paste. This dough is molded in the traditional forms, which are cooked until they are toasted slightly above.
